Some time ago my sister in law give me a bag of nuts, so I started to use them for different preparations: hazelnuts or crumbly meatballs, hazelnut cream, hazelnut cake, biscuits, pastry and this delicious shortcrust pastry with hezelnut! You can use it to make cookies, or a tart stuffed with hazelnut cream, or you can do like me and simply choose a jam, for me strictly home-made!

ingredients:

  • 500 g of flour
  • 285 g softened butter
  • 140 g of powdered sugar
  • 50 g hazelnut flour *
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon fleur de sel or Maldon salt

* for the hazelnut flour: I’ve peeled very well the helznuts from their skin rubbing together in a cotton cloth and then I blend it in a mixer with pulse, to avoid overheating too hazelnuts and not split up the pulp from their oil. If you want a very thin flour remember then to sift the flour to remove each big piece.

Place in the bowl of the mixer the half of sifted flour, sugar and almond flour, the butter in small pieces, eggs, vanilla and salt, start the mixer and let mix until the mixture becomes well blended, then add the other half of the sifted flour and reboot the machine until it becomes homogeneous.

Roll out the shortcrust pastry into a rectangular form, wrap in plastic and let it rest in the fridge for at least 12h.

When you want to using it, pull out the pastry from the fridge, put on our mold and let it rest a little before filling and bake it at 180 ° C.

It’s true. I’m not a fan of packaged foods, because they are full of preservatives and many other substances that are not good for us, but everyone tested them, so often I try to copy some sweets at home with only genuine ingredients.

Today’s recipe is not the result of my experiment but only the transcription of one famous recipe that you can find on some foodblog in the network and I wanted to try it for you (well not really for you, since they have been my breakfast for a few days!). This recipe is  the Mr.Day Donuts for breakfast!

ingredients for a donut cake or 16 little donuts:

  • 200 grams of softened butter
  • 150 grams of powdered sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 125 grams of rice flour
  • 125 g of corn starch
  • 6 g of baking powder
  • 1 pinch of salt

Mount with the whip the butter with the sugar until it’s creamy white. Then add the eggs, one at a time, the vanilla extract and continue to beat decreasing speed.

Sift together the flour with the baking powder and salt, add to the mixture a little at a time, stirring gently with a spatula. Pour into silicone molds and bake at 356°F/180°C for 15 minutes, if you make a large donut (⌀ 24cm) cooking it for 30 minutes. Let cool and take the donuts out from the molds paying attention, because they are quite soft and delicate. When it’s cool sprinkle with powdered sugar.

This is the first post of the year! In this year I hope to realize my projects, when something become reality I’m going to tell you about this,but now this is secret!

Before the cristmas period, I went to have a trip around the little cities between Lazio and Abruzzo where my father in law have a little romantic house in Rocca di Botte! At Carsoli there is a shop-mill called “Molino Stoduto” where you can buy anything! They sell any type of flour, object for the cousine realized in wood, legumes, vegetable, spice and any type of pots and materials for the kitchen!

The most important thing in this place is the warmth and friendliness of the owner of the shop, who will accompany you in your purchases!

During my shopping I bought the peeled red lentils, this ingredient is very tasty, rich in protein and Omega-3, cholesterol free, and easy to digest that this peeled lentils are even recommended for infant and their first meals!

I have prepared with this a peeled red lentils flans with crispy bacon and sour cream, a very good side dish to accompany a grilled steak as we did!

tartufi cioccolato e arancia

Christmas is arrived…and like every year it brings with it some thoughts and reflections. Christmas for me is synonymous of family, warmth! It is the most in importante feast in my house, I remember when I was a child and I was preparing the tree and the crib with my Dad: everyone has is rule, he settled the lights, then I touched the ball, and then the angels…my mom came to “interrupting” with her tart for a snack!

I think the memory is the best gifts that we can do every Christmas thinking about the moments that warm the heart, without falling in  and bad thoughts.

Since I live with my love, we decided to add to our tree objects, balls, bells etc. … that we collect on our travels, with the decorations that we have inherited from the family tree or simply that we bought on special occasions: this year we add the ball for the arrival of my grandson Giovanni! It’s great to pull out from the boxes every year our decorations and assign each one a memory!

Continuing to talk about balls I present to you the recipe for today: some simple chocolates with the flavors of Christmas: chocolate and orange truffles flavored with cinnamon!

In Christmas Time everyone are looking recipes for Christmas Eve or for the Christmas lunch, so I decided to make a couple of posts dedicated at this 2 occasions! For the Christmas Eve dinner in Italy it’s traditional eat seafood, so I thought at these Mediterranean sea bream fillets that are a dish suitable for all tastes, simple, light and very beautiful to present on our table.

Then I tell you a secret …a few days ago I was in a cooking school, and the students are preparing a fish menu, so I came back home with a desire to cook some seafood, so after a little stop at the fishmonger where I bought 2 sea bream to prepare, I’m ready to experiment!filetti orata alla mediterranea

ingredients for 2 people:

  • 2 whole sea bream or directly 2 fillet
  • 8 red tomatoes
  • dried oregano
  • 1 red garlic clove
  • white wine
  • 1 spring onion
  • a dozen of olive in oil like these
  • salt, pepper and extra virgin olive oil

First clean the fish, remove the scales and cut the fillet, once obtained the 4 fillets make a couple of incisions on the skin side, drizzle with oil, sprinkle with oregano, salt and pepper, sprinkle well  the condiment using your hands on both sides. Let fillets marinate while you prepare the other ingredients.

Prepare now the tomato salad: cut it into a little cubes removing all the internal liquid and the seeds. Chop about ten olives and add this to the tomatoes, dress whit a tablespoon of oregano, salt and extravirgin oil. Mix well. Using a circular form, make a circle of tomatoes and olive salad in the middle of each dish.

Finelly chop the spring onion using the white and green part, and put it aside. Now press the whole garlic and put it into the frying pan with some olive oil, when the frying pan is hot, add the fillet, first cook it on the flesh side and fade with a sprinkle of white wine. When the fillet are golden turn it cook on the skin side until it’s also golden brown and crispy. Put the fillet on the red salad,sprinkle with the chopped spring onion and some whole olive.
