The soft cake for breakfast or for a snack, need a bit of freshness in this period of the year, so I search the recipe for a cake with lemon and poppy seeds that caught my attention (I love lemon dessert!) on a number of some time ago of an English magazine, that collect recipes with a few calories per serving!

Once I find the recipe, It took me only 10 minutes, while the oven temperature it’s ok I make the dough!

The flavor of the lemon in contrast with the icing sugar is really tasty, and the cake remains very soft, fragrant and not too sweet … I love it!

ingredients:

  • 100 ml sunflower seed oil
  • 180 gr flour 00
  • 2 tsp baking powder
  • 180 gr white sugar
  • 25 gr poppy seeds
  • 4 eggs
  • Zest and juice of 3 organic lemons (if the lemon are big only use 2)

for the icing

  • 75 gr icing sugar
  • 6 teaspoons of limoncello (lemon liqueur)

Preheat the oven at 170°C/340°F. Sift together all the dry ingredients: flour, baking powder, sugar and poppy seeds.

In another bowl put the oil, egg yolks, the grated peel (yellow part only, otherwise the white will give a bitter taste to the cake), and the lemon juice. Mix with an electric mixer for 2/3 minutes.

Finally we add the dry ingredients to the mixture and mix well to obtain a homogeneous mixture.

Whip the egg whites and once ready join them into the mixture using a spatula, following the classic movement from below upwards.

Use butter or vegetable oil to grease a mold shaped like a ring, and fill it. Bake for 35/40 min, until it’s golden brown on the surface.

Remove the cake from the oven and let it stops for ten min. Then turn on a rack and let it cool completely.

Meanwhile, prepare the glaze by simply mix the lemon liqueur with the icing sugar and beating vigorously with a spoon until you have a smooth glaze. When the cake is cold, use a spoon to drip on the surface of the cake the glaze and let it curdle for a few minutes, our cake with lemon and poppy seed is ready to be enjoyed!
